Today we’re making Spicy Octopus Bibim Kalguksu, a fiery, savory, and incredibly satisfying Korean noodle dish you can easily cook at home.
Don’t have octopus? Feel free to use squid or baby octopus. And if kalguksu noodles aren’t around, somyeon (thin noodles) work just as well!
For the sauce, stir-fry onion, green onion, and garlic in oil, then add octopus and season with 1 tbsp oyster sauce, 2 tbsp soy sauce, 1 tbsp plum extract (or corn syrup/sugar), 0.5 tbsp sugar, 3–4 tbsp gochugaru, 0.5 tbsp minced garlic, a pinch of pepper, 1 tbsp sesame oil, 60ml water, and 3 tbsp oil. Sauté until fully cooked.
Boil kalguksu noodles, rinse with cold water, and place in a bowl.
Top with the spicy stir-fried octopus, sprinkle with roasted seaweed flakes and sesame seeds, and you’re ready to dig in.
