This dish features chewy glass noodles, crisp vegetables, and a rich sesame-soy sauce—perfect as a side or main dish.
Soak 100g of glass noodles in hot water for 30 minutes until soft. In a large pan over high heat, stir-fry 1/4 carrot and 1/2 onion in oil for 1 minute. Add sliced mushrooms and blanched spinach.
Pour in the sauce made from:
1 tbsp minced garlic, 3 tbsp light soy sauce, 1 tbsp dark soy sauce (optional), 1 tbsp sugar, 2 tbsp corn syrup, 1 tbsp sesame oil, and roasted sesame seeds.
Lower the heat and add the noodles. Stir-fry for 5 minutes until well mixed and the sauce is absorbed. Adjust seasoning to taste.
