Japchae is one of Korea’s most loved dishes—bouncy sweet potato noodles stir-fried with veggies, beef, and egg in a slightly sweet soy-based sauce.
It’s savory, satisfying, and perfect hot or cold.
To make it, cook 12 oz glass noodles until soft, rinse with cold water, and drain. Stir-fry strips of beef (or pork), onion, carrot, mushrooms, spinach, and green onion with a bit of salt and pepper. Make a simple sauce with 7 tbsp soy sauce, 3 tbsp honey, 2 tbsp brown sugar, and 2 tbsp sesame oil.
Toss everything with the noodles and sauce, finish with thin strips of cooked egg and sesame seeds. Serve warm or chilled—perfect for lunch, dinner, or parties!
