Raw marinated shrimp, or Saeu-jeot, is hands down one of my favorite rice-thief dishes ever.
These juicy shrimp are soaked in an umami-rich soy-based marinade that brings out incredible sweetness, flavor, and silky texture. It’s salty, sweet, and just the right amount of heat—perfect with a big bowl of rice.
To make it, simmer a soy sauce marinade with aromatics and spices (garlic, onion, chili, etc.—full list in the video) for 10 minutes, then chill it completely. Meanwhile, prep the defrosted shrimp: trim off sharp parts, remove the shell, and devein. Soak in soju for 15 minutes to remove any fishiness, rinse, and place in a container.
Add sliced onion, chili peppers, and lemon. Pour over the chilled marinade and refrigerate for 24–48 hours.
Once it’s ready, grab some warm rice, seaweed or perilla leaves, and dig in! These are unbelievably addictive, so be warned—you might need an extra bowl of rice. Watch the full video below for all the step-by-step details!
