These beef enoki mushroom rolls are one of my go-to dinners: juicy, savory, and packed with umami, all served over warm fluffy rice.
Thinly sliced beef wrapped around tender enoki mushrooms, cooked with veggies and a light soy-mirin sauce—what’s not to love?
Start by separating your enoki into small bundles and wrapping each with a slice of beef. In a bowl, mix your sauce: 2 tbsp soy sauce, 2 tbsp mirin, ½ tsp mushroom bouillon powder, and ¼ cup water. Sauté sliced onion, napa cabbage, and chili peppers in a bit of oil, then lay the beef rolls on top and pour in the sauce. Simmer with the lid on for a few minutes.
When the beef is nearly done, pour in two whisked eggs, drizzle a little sesame oil, and sprinkle scallions and black pepper.
Once the eggs are just set, take it off the heat and serve immediately over rice for the ultimate comfort meal.
