Perfect for a cozy dinner, this dish features pork, onion, and chunjang (black bean paste) in a thick, glossy sauce over chewy noodles.
Cut 400g pork into bite-sized cubes and stir-fry on high heat for 2 minutes. Add minced ginger (20g) and stir-fry 1 minute. Lower the heat, add 100–150g chunjang, and cook 1–2 minutes. Add chopped onion and green onion, stir-fry for another minute.
Season with 1 tsp soy sauce, 1 tbsp sugar, 1 tbsp oyster sauce, and 2 cups water. Simmer for 5 minutes. Mix potato starch and water (1:1), then stir it into the sauce to thicken.
Serve over boiled Chinese noodles and enjoy!
