Hello, I’m Lucy. 🍱 Today I’m sharing a quick and deeply flavorful side dish—
Niku Miso Onion ‘Bombs’. These juicy onions are stuffed with a rich, plant-based miso meat sauce, and they’re surprisingly easy to make.
Ingredients: 🧅 onion, 🍖 plant-based mince or tofu, 🍶 miso paste, 🍶 sake (optional), 🧂 soy sauce, 🍭 sugar, 🌽 cornstarch, 🧄 garlic, 🫚 ginger, 🥄 sesame oil, 🌶 doubanjiang (optional), 🧅 scallions, ⚪ sesame seeds
Quick Prep: Cut and core onions, slice into quarters. Microwave covered for 4–6 minutes until soft. Cook plant-based meat with garlic, then add ginger and sesame oil.
Mix miso sauce separately, pour it in and cook until thick. Stuff the onions, then top with scallions and sesame seeds. 🔥
You get a soft, sweet onion base filled with savory, slightly spicy miso “meat” that’s perfect over rice or on its own. “This has officially become a weekly staple in our kitchen.”
