Quick Prep: Pound the pork to tenderize, then coat with flour, egg + oil, and panko. Fry until golden and crispy. Simmer sliced onions in a dashi-based broth, add beaten eggs in portions for a soft, layered texture.
Place the tonkatsu on top—either before or after the eggs depending on your preference—and serve over warm rice with scallions.
