Hiroshima-Style Okonomiyaki, a savory Japanese pancake layered with noodles, veggies, and pork belly. It’s a complete meal in one bite—crispy, tender, and incredibly satisfying.
Ingredients: cabbage, green onion, eggs, pork belly slices, yakisoba noodles, cake flour, water, mirin, katsuobushi, tenkasu, tororo kombu (optional), narutomaki (optional), salt, oil, okonomiyaki sauce, Kewpie mayo, aonori, pickled ginger
Quick Prep: Mix the batter and let it chill for 1 hour.
Thinly slice cabbage and scallions, prep all toppings. On a griddle, spread a thin batter circle, then layer cabbage, tempura scraps, scallions, bean sprouts, kombu, and pork. Flip carefully to cook the pork, then stir-fry yakisoba, coat with sauce, and stack the pancake on top. Finish with a fried egg base and flip again.
The result is a crispy, layered masterpiece—noodles on the bottom, soft cabbage center, and a rich egg crust. “This is the only way I want to eat okonomiyaki from now on!” one fan commented.
