Hello, I’m Lucy. Today I’m introducing a comforting and nourishing Japanese hot pot—Shabu Shabu.
It’s a perfect meal to enjoy with family or friends, built around a light kombu broth and thinly sliced beef you swish to cook at the table.
Ingredients: 🍲 kombu, 💧 water, 🥩 thinly sliced beef, 🥬 napa cabbage, 🌿 shungiku, 🧅 Tokyo negi, 🍄 enoki, shimeji, shiitake mushrooms, 🥕 carrot, 🧊 tofu, 🍜 udon noodles, 🍋 ponzu, 🌰 sesame sauce, 🌶 shichimi togarashi, 🧄 grated daikon, 🧅 scallions
Quick Prep: Soak kombu in water for 30 minutes. Chop vegetables and mushrooms, slice tofu, and arrange everything on platters.
Prepare udon noodles and dipping sauces. At the table, heat the broth, add vegetables and tofu first, then swish beef for 20–30 seconds to cook. End the meal with udon noodles in the flavorful broth.
Shabu Shabu is all about clean flavors, tender meat, and the joy of interactive cooking. The contrast between the fresh vegetables and the rich umami of ponzu or sesame sauce is deeply satisfying. One diner noted: “The broth gets better with every bite.”
