Chicken Spring Rolls with Sesame Dipping Sauce. Light yet flavorful, this is a perfect choice for a nutritious lunch or refreshing appetizer.
Ingredients: chicken breast, garlic, scallions, carrot, cucumber, butter lettuce, mint & cilantro, rice paper wrappers, sesame seeds, soy sauce, sugar, rice vinegar, chili oil, sesame oil, sake, ginger
Quick Prep: Poach the chicken in a fragrant broth with ginger, scallions, and sake until tender, then shred into fine pieces
. Julienne the carrots and cucumbers, rinse and dry the herbs and lettuce. Soak each rice paper wrapper briefly in hot water, then layer lettuce, chicken, and veggies on the bottom, mint and cilantro on top. Roll tightly, folding in the sides. Mix up a rich sesame sauce by grinding sesame seeds and combining with soy sauce, sugar, vinegar, and chili oil.
