Hello, I’m Lucy. Today I’m sharing one of my favorite traditional Japanese recipes—
Tamagoyaki, a delicate rolled omelette often found in bento boxes. It’s simple in ingredients but requires a bit of technique—perfect for those looking to elevate their home cooking.
Ingredients: 🥚 Eggs, 🍬 Sugar, 🧂 Salt, 🍜 Soy Sauce or mentsuyu, 💧 Water or dashi, and optionally 🍶 Kewpie Mayo for bentos.
Quick Prep: Whisk together the eggs, soy sauce, sugar, and salt until smooth—strain for a fluffier finish. Heat a lightly oiled tamagoyaki pan on medium-low. Pour a thin layer of the mixture, let it set slightly, then
roll gently. Repeat the process by adding layers and rolling until a thick, golden roll forms. Shape with a bamboo mat, let it cool, then slice to serve.
This tamagoyaki is subtly sweet, savory, and incredibly tender. The texture is soft yet structured, and one viewer said, “This brought back memories of my grandma’s cooking—so comforting.”
