Dakbokkeumtang is Korea’s ultimate spicy comfort stew—tender chicken braised in a fiery, savory, slightly sweet sauce that clings to every bite.
It’s bold, hearty, and surprisingly simple to make at home with just one pot and a few pantry staples!
Grab one whole chicken and cut it into pieces. Prep your green onions and onion into large chunks. In a large pan, stir-fry the chicken briefly with a little oil and the chopped green onions. (You can add potatoes now if you have them!) Then add your sauce ingredients: 1.5 tbsp gochujang, 3–4 tbsp gochugaru, 1 tbsp oyster sauce, 3–4 tbsp dark soy sauce, 2 tbsp cooking wine, 1 tbsp chicken stock powder, 2 tbsp sugar, 1 tbsp minced garlic, and a dash of pepper.
Stir-fry until the chicken starts to glisten, then pour in enough water to just barely cover the meat. Let it boil until everything is fully cooked and the sauce is rich and thickened.
