Let’s make Kimchi Jjigae, Korea’s beloved spicy kimchi stew! It’s bold, tangy, deeply savory, and packed with tender pork belly, aged kimchi, and soft tofu—all simmered together for the ultimate comfort meal.
Start by sautéing chopped garlic and pork belly in 1 tsp of sesame oil. Once the meat starts browning, add 1 to 1½ cups of well-fermented kimchi, 1 tsp sugar, 1 tbsp soy sauce, and 1 tsp fish sauce. Stir for a few minutes, then pour in 2 cups of water.
Add ½ sliced onion, 1 tsp Korean chili powder, and simmer for 10–15 minutes. Finish with cubes of tofu and chopped shallots, simmering for another 3–5 minutes.
This dish is best enjoyed bubbling hot with a bowl of steamed rice.
