Today I’m making Jeukseok-tteokbokki, a fun and spicy Korean hotpot-style tteokbokki you cook and enjoy right at the table.
It’s bold, rich, slightly sweet, and packed with rice cakes, noodles, fish cake, dumplings, and more—all simmered in a delicious red sauce.
You’ll need sliced garaetteok (Korean rice cakes), soaked dangmyeon (glass noodles), fish cake, hard-boiled eggs, fried mandu (dumplings), and optional sausage or cheese. The sauce is made with gochujang, gochugaru, black bean paste, garlic, sugar, and a bit of instant noodle soup powder.
Layer vegetables like onion, carrot, and green onion at the bottom of a shallow pot, then arrange all toppings and pour in the sauce with about 5 cups water.
Simmer at the table until bubbling, then enjoy with rice or finish with stir-fried rice (bokkeumbap) using the leftover broth.
