Let’s make Bibim Guksu, a spicy, cold Korean noodle dish that’s tangy, refreshing, and loaded with bold flavor.
Perfect for warm days or when you’re craving something light yet satisfying.
For 1 serving, mix 2 tbsp gochugaru, 1 tsp soy sauce, 1 tbsp fish sauce, 2 tbsp sugar, 1 tsp minced garlic, 2 tbsp sesame oil, and some chopped kimchi to make the sauce. Boil 100g thin noodles, rinse in cold water, and drain well. Add the noodles to the sauce with chopped chives and peppers if you like, plus 1 tbsp vinegar. Toss everything until well coated.
Top with sliced cucumbers, extra chives or cheongyang pepper, and a final drizzle of sesame oil.
