Start by marinating 500g of bite-sized chicken pieces with a pinch of salt, pepper, and 2 tbsp water. Coat them evenly in a mix of ½ cup plain flour and ½ cup corn flour. Heat oil in a deep pan and fry the chicken twice—first at 160°C (320°F) until lightly golden, then again at 180°C (355°F) until extra crispy.
Meanwhile, make the sauce by simmering 1 tbsp oil, 3 minced garlic cloves, 2 tbsp gochujang (Korean chili paste), 2 tbsp tomato sauce, 1 tbsp soy sauce, 2 tbsp honey, and ½ tsp chili powder over low heat until glossy.
