With creamy avocado corn salsa, crispy potato wedges, and juicy paprika chicken, this meal feels comforting but stays light and macro-friendly. It’s perfect for busy weeknights when you want something fresh and flavorful without spending hours in the kitchen.
The salsa is a refreshing combo of roasted corn, cucumbers, cherry tomatoes, red onion, and a hint of Italian herb mix—tied together with a splash of rice vinegar and optionally a touch of olive oil. For the wedges, Yukon gold potatoes are air-fried until golden and crispy, seasoned simply with garlic salt and black pepper.
The star of the plate is a paprika-spiced chicken breast, pan-seared in a cast iron skillet until juicy and perfectly cooked.
