Roast 2 poblano peppers, 12 tomatillos, 5 garlic cloves, 1 jalapeño, and half an onion until beautifully charred. Meanwhile, season and sear 2 chicken breasts until golden, then boil with 7–8 cups hot water, 2 bouillon cubes, chopped onion, salt, pepper, oregano, and bay leaves for 1 hour.
Blend the roasted veggies with spinach, cilantro, and chicken broth until smooth. Add this green sauce to your soup base, then stir in hominy and the shredded chicken. Simmer for 15 minutes and it’s ready!
Top with shredded cabbage, diced onions, lime, and sour cream.
