Start by marinating cubed chicken breasts with yogurt, olive oil, and your favorite spice blend (like curry powder, chili powder, cumin, and paprika). Let it sit for 30 minutes. In a large pan, heat butter and olive oil, then sauté chopped onion, minced garlic, jalapeño, and ginger.
Cook the chicken until golden, then add one can of tomato sauce and 1½ cups of heavy cream. Stir well and simmer for 10 minutes. Adjust with more spices if needed—think cinnamon, chili, and a touch more curry. Simmer again for 2 minutes with the lid on.
