It’s cold and cloudy outside—perfect weather for a cozy bowl of Caldo de Camarón, a spicy and aromatic Mexican shrimp soup that warms you from the inside out.
Start by sautéing shrimp heads and shells in hot oil to release that rich shrimp flavor. Add hot water and let it boil. Once the broth is ready, remove the shells and set the broth aside. In another pot, sauté onion, garlic, tomato, dried chiles, and salt. Add water, boil, and then blend it all with chili powder, Sichuan peppercorns, and chili paste until smooth.
Pour the blended sauce into the shrimp broth, bring to a simmer, and add diced celery, carrots, and potatoes. Once the veggies are tender, add the shrimp and simmer gently.
Just before serving, toss in a handful of fresh cilantro.
