This hearty Caldo de Pescado is the perfect comfort soup, packed with tender shrimp, fish, and tons of fresh veggies in a smoky, spicy broth!
Start by frying tomatoes, onion, garlic, chipotle, and guajillo chiles for about 5 minutes. Add a cup of water, simmer a bit longer, then blend everything into a smooth chile sauce.
In a large pot, bring 4 cups of water to a simmer. Add chopped carrots, celery, squash, corn, potatoes, chayote, and some cilantro. Pour in the chile sauce, season with oregano, shrimp bouillon, Cajun seasoning, salt, and pepper. Let it all simmer for 20 minutes.
Add in raw shrimp and your favorite fish (like catfish) and cook just 5–8 minutes until everything is perfectly tender.
